This salad is a flavour explosion that is easily pulled together with any ingredients you have in the fridge or garden. Perfect as a main meal or leave the chicken out as a side
salad to go with your protein of choice.

Maple BBQ Chicken
& Bacon Salad

Ingredients

  • 4 chicken thighs (boneless & skinless)
  • 8 rashes streaky bacon
  • 1/3 cup Sweet Bourbon St. BBQ sauce

  • 1 head cos/butter/fancy lettuce (Or whatever salad greens you have on hand. I just picked a variety from my garden)
  • 1/2 red onion, finely sliced
  • 1/2 cucumber, sliced and halved
  • Handful fresh basil, sliced

  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 1/2 tsp Man Rub
  • 1/2 tsp Sesh Mustard (substitute with Dijon if you don't have)
  • Man Grind and Pepper to taste

Directions

  1. Season your chicken thighs with Man Grind and coat in Bourbon Maple BBQ sauce. Also coat your bacon in the Sweet Bourbon St. Maple BBQ sauce and set aside.

  2. Turn your BBQ or grill pan to a medium high heat and cook your chicken until golden and cooked through. Set aside to rest while you cook your bacon until cooked to your liking.
  3. Take your salad greens and assemble in a bowl or a platter. Lay the cucumber basil and red onion over the salad greens.
  4. In a small jug or jar mix together all the dressing ingredients and pour over the salad on the platter.
  5. Take the chicken and slice into strips and finely slice the bacon.
  6. Sprinkle the bacon over the salad then lay the chicken on top.
  7. Serve and enjoy!
