Ingredients
-
500g beef mince
- 1 onion, diced
- 1 L beef stock
-
2 tbsp Man Rub
- 1 heaped tbsp Italian Stallion
- 2 tbsp Ketchup
- 2 tbsp yellow mustard
-
250g pasta spirals or small pasta shape
-
150g Jalapeno cheese or any cheddar cheese
- 1/3 cup pickles, finely chopped
- olive oil
Directions
Saute onion in a little olive oil, in a large deep fry pan or pot (or stove top casserole dish), for 2 minutes to soften. Add beef mince and brown, breaking up with a wooden spoon.
Add Man Rub, Italian Stallion and ketchup, stir through.
Add mustard.
Add pasta and beef stock plus 1 additional cup of water, bring to a boil then cover with a lid and reduce heat to a simmer for approximately 20 minutes or until pasta is cooked. Stir a few times to prevent sticking.
Grate cheese, for a point of difference we used jalapeno cheese but any cheese will work.
Remove from heat and stir through cheese and pickles vigorously to incorporate it into the sauce. Add a tablespoon or two of pickle juice from the jar if you wish. It adds a great flavour.
Allow to sit covered for 3-4 minutes before serving.
Serve with a little extra cheese and pickles.
