Tuscan Beef Pasta

Some of our favourite flavours come together in this simple pasta dish, making it an instant hit with the whole family. It's the perfect balance of delicious ingredients that everyone will love, and easy enough to whip up on a busy weeknight.

Ingredients

500g beef mince
- 1 onion finely diced
- 5 cloves garlic
- 1/2 cup sundried tomatoes
- 1 zucchini grated
- 2 cups beef stock
- 1/4 cup tomato paste
- 1 tbsp Italian Stallion

1 tbsp Man Rub
- 1 tsp sugar
- 60 g baby spinach large handful
- 3/4 cup cream
- 50 g parmesan grated
- 300 g pasta
- Olive oil
Garnish
- Parmesan
- Fresh basil
Directions
Bring a large pot of salted water to the boil and pop pasta in to cook.
In a large deep fry pan or shallow casserole add a drizzle of oil and add finely diced onion and chopped garlic, sauté over a medium high heat for 2-3 minutes to start to soften.
Add beef mince and brown for 5 minutes, breaking up with a wooden spoon.
Add tomato paste, Man Rub and Italian Stallion and cook off for 30 seconds. Stir through roughly chopped sundried tomatoes and grated zucchini.
Pour in beef stock and add sugar to balance, simmer for 10 minutes over a medium heat to reduce the stock.
Add cream and spinach and simmer for another couple of minutes to wilt spinach, then stir through grated Parmesan.
Drain pasta and add to the sauce, toss to coat.
Garnish with additional Parmesan and some fresh basil if you have it.
