It may not look like much but this salad is out the gate good, the flavours just pull together so well and ensure this will become a regular on your summer menu. Incredible on its own or as a side.
Place the onion, cucumber, tomato a dash of olive oil and a big pinch of Man Grind into a bowl and mix to combine. Set aside.
Heat a heavy, non stick pan over medium heat. Add a dash of olive oil and allow to heat for about 30 seconds then toss in the cubed halloumi. Allow to brown on each side.
While the halloumi is cooking, mix together the honey, teaspoon of olive oil, Italian Stallion, the remaining pinch of Man Grind and lemon juice in a bowl.
Once the halloumi has browned, add the sauce to the pan and swirl it around to allow the halloumi to be coated in the sticky sauce. Once the honey has melted, remove from the heat.
Place the baby spinach in your serving bowl, add the tomato mixture and toss to combine. Add the halloumi and all the sauce from your pan to your salad and give it a quick toss to combine.
Serve warm and enjoy!
Recipe Note
Just double, triple etc the above recipe if serving to more than one person as a main. This also makes a great side in which case I'd just double it to serve 6 people.
