Our Elton Mess takes the classic Eton Mess to new heights! This dessert layers light whipped cream, crunchy meringue, tangy citrus, and sweet berry goodness, all topped off with our signature Elton Mess sprinkle. It's a fun and flavourful twist on a timeless favourite—deliciously messy, perfectly indulgent, and guaranteed to impress!

Ingredients

12 mini meringues (use a whole pav if you prefer!)
- 1 cup berry compote or sauce
- 1 cup lemon curd
- 500ml cream whipped lighty
- Fresh strawberries and/or kiwifruit (optional add on)

Elton Mess, sprinkle ½ sachet
- 12 mini jars to serve (Old Pepper and Me 200ml jars work great)
Easy Lemon Curd

1 cup white sugar
- 4 lemons (for zest)
- 1 cup fresh lemon juice
- 3 whole eggs
- 2 egg yolks
- 125g butter, melted
Directions
In a large microwave-safe bowl, whisk together the sugar and eggs.
Next, whisk in the egg yolk, lemon juice, and lemon zest.
Pour in the slightly cooled melted butter and whisk to combine.
Place the bowl in the microwave and cook on high for 1 minute, then stir.
Repeat in 1-minute intervals until the curd has thickened and coats the back of a spoon.
Depending on your microwave, this will take 4 to 6 minutes.
The curd will thicken further as it cools in the fridge.
To assemble
Crush the meringues, then layer them into the jars as follows:
1 tbsp lemon curd
½ crushed meringue
1 tbsp whipped cream
Sprinkle of Elton Mess
1 tbsp berry compote
½ crushed meringue
Top with cream
Garnish with Elton Mess
