Courgette Salad

Dive into a refreshing Raw Courgette Salad, where thin ribbons of courgette are beautifully dressed with our zesty How I Mint Your Mother sauce. This vibrant dish features creamy burrata, toasted pine nuts, and sweet orange segments, all topped with fresh basil for a burst of flavour.

Ingredients

3 courgettes

How I Mint Your Mother
- 1 ball of Buratta

25g toasted pine nuts

Lemon zest
- 1 orange, segmented

30g basil, finely chopped
Directions
Using a peeler, peel the courgettes into thin ribbons.
Add them to a bowl with enough How I Mint Your Mother dressing to coat them nicely, but not to drown them.
Arrange the dressed courgette ribbons on a serving platter.
Roughly tear the burrata and place it on top of the courgette ribbons, along with the toasted pine nuts, segmented orange, and basil leaves.
Season with cracked pepper, Man Grind, and lemon zest to taste.
