Melt butter in a standard casserole of large pot and add flour and onion dip mix.
Mix well and cook off for a minute or so.
Whisk in half the stock and mix until smooth and then add the remaining stock. If you like really thick soup only add half of the remaining stock and adjust to your liking. Turn the heat down to medium low and simmer for 5 minutes stirring regularly to cook out the flour.
Peel carrot and potatoes and dice into centimeter cubes.
Boil the vegetables in a separate pot until just tender or put in a bowl of water in the microwave for about 6-7 minutes to mostly cook through. Drain well and add to the soup.
Chop the cooked chicken and add to the soup.
Add the corn and simmer on low for a final five minutes.
Check the seasoning and season with man grind if needed, this will depending on how salty the chicken stock is.
Serve with croutons or fresh bread.
Garnish with fresh parsley if you like.
