Remove sausages from casing and fry in a little oil over a medium high heat for 5-7 minutes until browned and a nice crumble has formed. If using spinach add to the pan in the last minute or two to wilt.
Add the eggs, cottage cheese, cheese and man grind to a blender and blend for 30 seconds until smooth.
Line a large baking dish or deep slice tray with baking paper and add the crumbled sausage in an even layer.
Cut bacon into small strips and sprinkle over the sausage.
Pour the egg mixture over the sausage and bacon and sprinkle with the chopped parsley and then the Man Rub.
Pop in the oven and bake for 20 minutes or until the egg is set.
Cut into 6 or 8 portions. This will keep in the fridge for 4-5 days.
