A fun breakfast that is almost a hybrid of pancakes and Yorkshire pudding! Perfect for footy fans with a sweet tooth!

Ingredients

1 cup flour

1 cup milk
-
3 eggs (room temperature)

2 tbsp sugar

½ tsp Bakers Salt Blend

3 tbsp butter (about 40g)
Directions
In a blender or food processor add flour, milk, eggs, sugar and bakers blend.
Blend until smooth about 1 minute. If time allows leave to rest for 15-30min.
Preheat oven to 200C Fan Bake.
Heat a cast iron skillet with butter over a medium high heat until butter is sizzling. Swirl the butter around the skillet so it coats the sides.
Pour in the batter. Again give the pan a bit of a swirl so the batter goes up the side of the pan a bit. Pop in the oven for 15-20min. When cooked the center will be set and the edges puffed up and away from the sides of the pan.
Scatter with fresh berries, dust with icing sugar and serve immediately with a drizzle of maple syrup.
