Light, fluffy, and bursting with fresh berry goodness, this Berry Mousse is the perfect sweet treat for any occasion. Serve it up in individual glasses for a stunning dessert that’ll have everyone swooning.
Ingredients
60 g Berry Poppins
1 cup boiling water
1 cup vanilla Greek yoghurt
1 cup cream
3 tbsp icing sugar
Directions
In a microwave safe bowl whist berry Poppins and boiling water and leave to sit for 5 minutes.
Microwave for 90 seconds to insure gelatine is dissolved. Set aside for 10 minutes to cool slightly.
Whisk yoghurt into the Berry Poppins mix.
Add the icing sugar to the cream then use an electric whisk/beat and beat till soft peaks form.
Fold the yoghurt mix into the cream gently.
Pour into 6 ramekins or set in a large serving bowl to scoop out.
Pop in the fridge to set for 6 hours (overnight is best if time allows).
