Tiramisu Cheesecake

Rich, velvety and just the right amount of naughty. This tiramisu-inspired cheesecake brings coffee, cream and cocoa together in perfect harmony.
Ingredients

1 cup of boiling water

1 packet of TiraMaWho

2 packets of caramel Tim Tams

100g butter
-
4 cups of cream
-
1 cup of cream cheese
-
1 can condensed milk
-
1 cup of mascapone
-
½ cup coffee espresso (or 2 tsp instant coffee with ½ cup of water)

½ cup of water
-
½ cup Kahlua (optional)

1 packet lady fingers
-
Vanilla and icing sugar, to taste

1-2 tbsp dutch cocoa
Directions
- Line a 10-inch springform tin with baking paper.
- Mix the TiraMaWho with boiling water, whisking until smooth. Set aside to cool.
- Crush the caramel Tim Tams with the melted butter and press into the base of the tin. Chill until firm.
- Whip the cream to medium peaks and divide in half. In a separate bowl, beat the mascarpone, cream cheese and condensed milk until smooth. Gradually add the cooled TiraMaWho mixture and mix until combined. Gently fold through one half of the whipped cream.
- Spread half the filling over the biscuit base. Make a soaking syrup by mixing coffee, water and Kahlua, then quickly dip the ladyfingers and layer them over the filling. Top with the remaining filling and refrigerate until set.
- Before serving, sweeten the remaining whipped cream with vanilla and icing sugar. Pipe over the top and dust generously with cocoa.
- Remove from the tin, slice and serve.
