Orange Spiced Chicken

Ingredients
- 1 cos lettuce washed and chopped
- 1 handful baby spinach
- 2 tomatoes diced
- 1 avocado, diced with a squeeze of lemon
- Β½ cup cucumber, diced
- Β½ red capsicum, sliced
- 2 spring onions, thinly sliced
Mint yoghurt

ΒΌ cup plain yoghurt
- 10 mint leaves finely sliced
- Man Grind Flakes, to season
Sticky chicken

3 chicken thighs boneless and skinless
- Β½ cup of Wham Bam!Β
Directions
- Start by slicing the chicken thighs (or breast) into chunky strips.
- Heat a pan over medium high heat and sear the chicken until itβs golden on the outside.
- Once itβs nicely coloured, pour over a generous splash of Wham Bam!
- Turn the heat down and let the chicken gently simmer in the sauce for 8 to 10 minutes, until cooked through, glossy and sticky.
- While the chicken simmers, toss together your salad ingredients in a large bowl. Add a good squeeze of lemon and season well with Man Grind Flakes. Divide the salad between two plates.
- Stir together the minted yoghurt until smooth and creamy.
- When the chicken is tender and coated in that sweet, citrus spiced glaze, pile it over the fresh salad. Drizzle with the minted yoghurt, add a few extra mint leaves if you like, and serve while the chicken is warm and sticky.
