Chai Pannacotta
With Sweet Chaild Of Mine

One of my favourite desserts, now made ridiculously easy! This pannacotta is a lovely creamy and light dessert, infused with fragrant chai spices. Goes beautifully with all berries and some crushed biscuits. This can be made in a dariole mould and popped out onto a plate, or just set it in a glass and top with berries and biscuit crumbs to serve.

Ingredients

Chai Pannacotta

1 sachet Sweet Chaild of Mine
500ml Puhoi half and half. (Or 250ml cream 250ml milk)
1 cup Lotus Biscuit (smashed into crumbs)

Cherry Compote

400g frozen pitted cherries
3 tsp Bakers Blend
1/3 cup sugar

Instructions

Heat milk in a saucepan and bring to a simmer, almost boiling. Remove from the heat and whisk in the pannacotta sachet and leave to sit for 10 minutes to bloom. Strain the mix and pour into dariole moulds or glasses. Leave to set in the fridge for 4-6 hours.

To make the cherry compote, add the frozen cherries to a saucepan, and add the sugar and bakers blend. Simmer gently for around 15 minutes until thick and syrupy.

If using moulds turn the pannacotta out on a plate and serve with crushed Lotus biscuit crumbs and compote or alternatively add to the top of the pannacotta in a glass.

Alternatives

Dairy Free: Use coconut cream to replace cream and milk.
