A delicious variation on an orzo salad, perfect for summer entertaining
Cook orzo in a large pot of boiling salted water according to the timing on the packet. In the final minute of cooking at the peas to blanch. Drain and rinse with cold water to cool slightly.
Combine pesto, zest and juice of lemon, olive oil and about 1 teaspoon of Man Grind in a large bowl.
Mix together to form dressing.
Add orzo and peas.
Toss really well to coat, the rocket will wilt slightly but this is what you are after.
Add crumbled feta and Mother Dukkah and mix through. Place in a serving bowl and sprinkle with a little extra dukkah and feta if you like, you can also add some fresh basil if you want.
