Marry Me Chicken

Ingredients

  • 500g boneless, skinless chicken thighs

  • 6 cloves garlic

  • ½ cup flour

  • 1 teaspoon Man Grind Flakes

  • Oil for cooking

  • 50g butter

  • ½ cup sliced sun-dried tomatoes

  • 2 cups chicken stock

  • 1 ½ cups cream

  • 2 teaspoons Marry Me

  • Pepper on Me, to season

  • 100g grated parmesan

  • Fresh basil, to garnish

Directions

  1. Lightly pound the chicken thighs to an even thickness and cut in half. Slice the garlic and set aside.

  2. Pop the flour on a plate, season with the Man Grind Flakes and coat the chicken in the seasoned flour.

  3. Drizzle some oil into a large/deep pan or shallow casserole dish over a medium-high heat and sear the chicken for about 2 minutes on each side to brown. Set aside on a plate.

  4. Wipe out the pan then add the butter and melt over a medium-high heat before adding all the garlic. Sauté for a minute or so.

  5. Next add the sliced sun-dried tomatoes and sauté for another minute before pouring in the chicken stock and simmering for a few minutes to reduce slightly.

  6. Add the cream and return chicken to the pan, season with the Marry Me and simmer for 5 minutes over a medium heat.

  7. Add Pepper on Me to taste and stir through the parmesan.

  8. Garnish with fresh basil and more parmesan.
