Chocolate Self Saucing Pudding

A proper Kiwi classic. This rich, chocolatey self saucing pudding bakes up soft and fluffy on top with a warm, gooey sauce hiding underneath. Serve it straight from the dish with a big scoop of vanilla ice cream or cream.

Chocolate Self Saucing Pudding

Ingredients

  • 1 packet Saucy Minx

  • 60 g butter, melted

  • 1 cup milk

  • ½ cup brown sugar

  • ¼ cup cocoa powder

  • 2 cups boiling water

Directions

  1. Preheat the oven to 160°C fan bake and lightly grease a medium baking dish.

  2. In a bowl, mix all of the Saucy Minx, 60g melted butter, and 1 cup milk until a thick batter forms. Spoon into the baking dish and spread evenly.

  3. Sprinkle ½ cup brown sugar and ¼ cup of cocoa powder evenly over the batter.

  4. Carefully pour 2 cups boiling water over the back of a spoon onto the batter. Do not stir.

  5. Bake for about 30 minutes, or until the top looks set.

  6. Serve warm with ice cream or cream and enjoy!
