
Hot Potato Soup
Ingredients
50gm butter
2 onions sliced
1 tsp garlic (chopped or minced)
3 anchovies (optional)
1 tsp sesh mustard
35gm Hot Potato, Hot Potato
1 kg peeled potatoes
1 head of cauliflower
1 tsp Man Grind
1 tbsp lemon juice
2l chicken stock (or veggie if preferred)
½ cup cream
Instructions
1:
In a large pot, saute onion and garlic in butter until soft, then add the anchovies, mustard and lemon juice. Add ½ the sachet of hot potato seasoning.

Dice the peeled potatoes and cut the cauliflower into florets, and add these into the pot.

Add the chicken stock, lemon juice and man grind. Stir well and bring to a simmer.

Simmer for around 35 minutes until the cauliflower and potato are super tender.

Use a stick bender to blitz the soup till it’s super smooth. Add in ½ cup cream and blend again.

Check seasoning and add a little more man grind if needed.

Serve hot, and sprinkled with croutons and our Hemp Haze dukkah for a delicious twist!

Garnish with sesh oil and fresh italian parsley for a real show stopper.
