Eggnog

An American classic that everyone should try at least once – Eggnog is the festive drink that perfectly blends creamy, spiced flavours with a rich, smooth texture.

Ingredients
- 6 eggs, free range and fresh
- 1 cup caster sugar
- 1 tbsp good quality vanilla
- 1 tsp Bakers Blend
- 1 cup Bourbon or Rum
- 1.5 cup cream
- 1.5 cup blue milk (not trim)
Directions
Separate eggs, reserving egg whites (place them in a bowl in the fridge).
Beat egg yolks and sugar together.
Beat until pale and creamy and sugar is dissolved.
Add Bakers Blend and vanilla.
Add bourbon (see notes), mix to combine.
Add milk and cream and mix for 1 minute on medium speed.
The most important step! Cover eggnog and chill in the fridge for an hour minimum but preferably a few hours. This is to age the nog and magic happens and it thickens up.
After a few hours of aging beat the egg whites until stiff peaks form.
Pour the eggnog into the egg white and whisk by hand to combine.
You will get a thick almost fluffy custard type consistency.
Pour into glasses and grind over a little additional Bakers Blend. Eggnog will keep in the fridge for 2-3 days.
