Corn & Bacon Pasta

A super simple pasta dish that’s packed with flavour and always a hit with our littlest addicts. It’s the perfect go-to for busy nights when you need something quick, easy, and delicious.

Corn & Bacon Pasta

Ingredients

  • 300 g streaky bacon
  • 2 cups frozen corn
  • 300 g pasta curls or macaroni
  • 50 g butter
  • 1 tbsp garlic crushed
  • 3 tbsp Onion Dip Mix
  • 250 ml cream
  • 250 ml chicken stock or water and stock powder
  • 1/2 cup grated cheese we just used Edam
  • Pinch of Man Grind

Directions

  1. Bring a large pot of salted water to a boil and cook your chosen pasta until al dente.

  2. While the pasta is cooking add the butter to a large fry pan and pop over a medium high heat, melt the butter and add the garlic, cook for 30 seconds.

  3. Cut the bacon into small slices and add to the pan, sauté for 3-4 minutes over a medium heat.

  4. Add the cream and stock and sprinkle over Onion Dip Mix, mix to combine and dissolve the dip mix, add the frozen corn and bring to a simmer, simmer for 5-6 minutes to reduce the sauce.

  5. Add grated cheese and stir to melt.

  6. Drain pasta and add to the sauce, toss to coat. Remove from heat and leave to stand for a couple of minutes.

  7. Taste and season with a pinch of Man Grind if needed.
