American diner-style breakfast potatoes are a great alternative to hash browns. Crispy and moreish, they are the perfect accompaniment to poached eggs.

Breakfast Potatoes

Ingredients

  • 6 washed agria potatoes

  • 1.5 tbsp Blow My Coals

  • 25g butter

  • Olive oil

  • Man Grind

  • Poached eggs

  • Bacon

  • Avocado

Directions

  1. Dice the potatoes into 1cm ish cubes. You want them fairly small. Add the butter and a drizzle of oil to a large fry pan and melt over a medium high heat then add the potatoes

  2. Cook for about 6-8 minutes tossing regularly so they brown in all sides. Check a cube to see if they are cooked through.  Reduce the heat if they are browning too quickly

  3. Add Blow my Coals and toss well to coat, cook off for another 1-2 minutes.

  4. Season with a little man grind if you feel it needs it.

  5. Serve as you would hash browns or as part of a breakfast bowl with eggs, bacon, avocado etc.
