Lemon Passionfruit Yoghurt Loaf

This soft, moist yoghurt loaf is full of fresh lemon flavour and topped with a sweet, tangy passionfruit finish that makes every slice feel a bit special.
Ingredients

2 cups plain flour

2 tsp baking powder

Β½ cup sugar

1 tbsp Boogie Nights

1 tsp Bakers Blend
-
1 tsp vanilla extract
-
1 lemon zest and juice

ΒΎ cup olive oil

1 cup greek yoghurt
-
3 eggs
-
100g passionfruit pulp in syrup
Sugar Coating

2 tbsp lemon juice
-
1-2 tbsp Boogie Nights
To serve

ΒΎ cup greek yoghurt
-
ΒΌ cup passionfruit pulp in syrup
Directions
Preheat oven to 175Β°C, line a loaf tin and set aside.
Combine dry ingredients in a mixing bowl. Whisk together.
Combine wet ingredients in a separate bowl and whisk well to combine.
Sift dry ingredients into the wet and mix until just incorporated.
Bake in the oven for 40-50 minutes or until golden and a toothpick comes out clean when inserted into the centre. Set aside to cool.
Once slightly cool, remove from the tin and pour over lemon juice and coat with sugar.
To serve, slice and dollop with yoghurt and extra passionfruit pulp.
