Creamy feta baked until warm and golden, then finished with a drizzle of olive oil and a generous sprinkle of our Greece Lightning seasoning. Simple, salty and seriously good. Just add crusty bread.
1 tbsp tomato paste (optional, for deeper flavour)
Fresh parsley or basil, chopped (for garnish)
Directions
Preheat oven to 180°C fan bake.
In a skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.
Stir in the crushed tomatoes, tomato paste, Greece Lightning, chilli flakes, smoked paprika, salt, and pepper. Simmer for 10 minutes, until the sauce thickens slightly.
Transfer the tomato sauce to a small ovenproof dish.
Place the block of feta in the centre, gently pressing it into the sauce.
Drizzle a little olive oil over the feta and sauce.
Bake for 20–25 minutes, until the feta is soft and slightly golden on top.
Garnish with fresh parsley or basil. Serve warm with crusty bread or pita for dipping.
