Golden, crispy, and packed with juicy corn kernels, these Corn Fritters are the perfect mix of sweet and savoury. Light, fluffy, and oh-so-easy to whip up for breakfast, lunch, or a snack!
Ingredients
1 tin corn (whole kernels)
⅓ cup corn juice (from the tin)
1 courgette, grated
2 eggs
1 cup self raising flour
1 tsp Black Gold
Good pinch chopped fresh herbs
(Dill, basil or parsley)
100g crumbled feta
Chopped jalapenos (optional)
Oil for frying
Directions
Whisk the two eggs with the corn juice and self raising flour, season with the black gold and whisk to a batter.
Add the corn kernels and grated courgette to a bowl and Bind with the batter.
For deep fried corn cakes - Heat oil in deep fryer to 180°C, and using two teaspoons take some of the batter, and from into an oval, use one spoon to push the batter off the other and into the hot oil.
Remove from oil once golden brown and crispy, and drain on a paper towel.
4. Serve with an extra sprinkle of Black Gold, the Sucker Punch mayo and more fresh herbs.
For corn fritters, heat 1cm oil in a shallow frying pan and fry a heaped tablespoon lot of the mixture till golden brown, flip over and fry till golden and cooked through.
Serve with crispy bacon, poached eggs and generous drizzle of Sucker Punch mayo.
