Crispy pastry, smoky bacon, fresh herbs and creamy cheese all baked into one delicious quiche. Perfect for a summer’s day lunch and a great option for taking with you to the beach.

Ingredients
- 2-3 sheets savoury short pastry
- 300g streaky bacon
- 2 onions
- 10-12 eggs
- ½ cup cream
- 1 cups tasty cheese
-
Handful of fresh herbs (parsley or chives)
-
3 teaspoons Man Grind Flakes
-
3 tablespoons G-Banger
Directions
- Preheat the oven to 170°C fan bake.
- Line a greased quiche dish with pastry sheets, making sure the base and sides are fully covered with no gaps.
- Place a sheet of baking paper over the pastry, then pour about 1 cup of raw rice on top to weigh it down. Bake for 15 minutes.
- At the same time, cook the bacon in the oven (or in an air fryer, if you prefer) until crispy. Finely dice the onions and add them to the bacon for the last 5 minutes of cooking.
- In a large mixing bowl, combine the eggs, tasty cheese, herbs, Man Grind Flakes, and G-Banger. Whisk until smooth and well combined.
- Finely chop the cooked bacon, then add it along with the onion to the egg mixture. Whisk again to combine.
- Once the pastry is pre-cooked, remove the rice and baking paper. Pour the egg mixture into the pastry shell.
- Bake for 35 to 40 minutes, or until just cooked through. Allow to cool slightly before serving.
