Ginger Loaf

A delicious piece of afternoon baking to enjoy on Christmas Day. This classic is super easy to throw together with our Ginger Spice Mix. Serve with butter or your favourite spread of choice.


160g Butter
125ml Golden Syrup
2 cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
2 tsp Bakers Blend
3 tbsp Ginger Spice Mix
260g Brown Sugar
1 Egg
250ml milk



Melt the butter, golden syrup and brown sugar together in a small saucepan.


Add the flour, baking powder, baking soda, Bakers Blend and the spices to a large bowl. Whisk together.


Stir the milk into the wet ingredients, then whisk in the egg.


Pour the wets into the drys and whisk until smooth.


Pour into a greased and lined loaf tin, and bake at 170°C for one hour.

To Serve

Slice and serve warm with loads of butter.
