French Kiss Chicken Schnitzel

Golden, crispy and packed with the bright, herby flavour of French Kiss, this homemade schnitzel is comfort food done right. Served with creamy mash, green beans and a squeeze of fresh lemon, it's a simple family dinner that's guaranteed to earn a spot on regular rotation.
Ingredients

2 large chicken breasts

½ cup flour

2 teaspoons French Kiss

1 teaspoon Man Grind Flakes

2 eggs

2 cups panko crumbs

2 teaspoons French Kiss

1 tablespoon butter

2 tablespoons olive oil
To serve

Mashed potato

Directions
Slice each chicken breast in half horizontally to create 4 thinner pieces.
Place the chicken between two sheets of baking paper and gently flatten with a rolling pin until an even thickness.
Combine the flour, 2 teaspoons of French Kiss Seasoning and the Man Grind in a shallow bowl.
Crack the eggs into a second shallow bowl and whisk until combined.
Combine the panko crumbs and remaining 2 teaspoons of French Kiss Seasoning in a third shallow bowl.
Coat each piece of chicken in the seasoned flour, then dip into the egg before pressing into the seasoned panko crumbs until well coated.
Heat the butter and olive oil in a large frying pan over medium heat.
Cook the schnitzels for 3–4 minutes per side, or until golden brown, crispy and cooked through. Cook in batches if needed to avoid overcrowding the pan.
Transfer to a paper towel-lined plate and season lightly with extra Man Grind, if desired.
Serve with creamy mashed potato, green beans and lemon wedges.
Recipe Note
ADHD Version: Slice and flatten the chicken, then crumb it through French Kiss seasoned flour, egg and panko. Pan-fry until golden and crispy, then serve with mash, green beans and lemon wedges.
