This is one of those summer salads you’ll keep coming back to. Sweet corn, creamy feta and fresh, zesty flavours come together in a way that just works. Perfect as a side, or paired with corn chips or grilled protein for a super easy, no-fuss dinner.
Ingredients

2 cans corn kernels, drained and washed

1 can black beans

1 cucumber

2 red capsicum

1 green onion

Feta
-
1 avocado
-
1 lemon or lime

¼ cup mayo

Taco Tuesday

1 bag corn chips
Directions
Drain and wash the corn, grill this with some olive oil over a hot pan until they start to visibly char. Sprinkle over the Taco Tuesday, covering all the corn. Transfer to a bowl, and place into the fridge to cool.
Finely chop the cucumber, red capsicum and green onion. Roughly dice the avocado and feta, leaving these elements slightly more chunky. Throw together in a large bowl.
Rinse and drain the black beans. Add the beans and the corn into the large bowl.
Add the mayo and lemon juice to the bowl, you can add a tablespoon more of Taco Tuesday too. Season with salt and pepper.
Serve cold, in a large salad bowl. You can have this as a side salad, on top of a mexican mince bowl or scoop and eat with corn chips!
