Watermelon Salad

Fresh, colourful and full of contrast, this watermelon salad combines sweet fruit, salty halloumi and a punchy dressing in every bite.
Ingredients

50g baby spinach

2 cups cubed watermelon

1 block halloumi (180-200g)

ΒΌ cup chopped mint

1/3 cup walnuts or sliced almonds

Β½ tsp Black Gold

Oil
-
ΒΌ red onion thinly sliced (optional)
Dressing
-
1 tsp lemon juice
-
1 tbsp honey
-
1 tsp Insane in the Grain

3 tbsp neutral oil

Pinch of Man Grind Flakes
Directions
Cut halloumi into 1cm thick slices and drizzle with a little oil, pan fry over a medium high heat until golden on both sides, cut into smaller cubes or triangles.
Peel and cube watermelon into 2cm cubes.
To make the dressing add all the ingredients to a jar and shake or blend in a nutribullet to combine.
To build the salad, arrange the spinach on a large plate or platter.
Scatter over the cubed watermelon and sprinkle the Black Gold over the watermelon.
Arrange the halloumi in and around the watermelon, followed by the chopped mint and walnuts. Scatter over the red onion if using.
Drizzle over the dressing and serve immediately.
