Peel and slice the potatoes as thinly as possible.
Toss the potato slices in oil and season with Black Gold. To start cooking them, place them in the air fryer for 10 minutes. If you don’t have an air fryer, microwave them for 3 minutes to soften slightly.
While the potatoes are cooking, layer up the filo pastry. Brush each layer with butter or spritz with oil. Stack six sheets, mostly overlapping, into a square shape.
Spread the beetroot relish in a circle on the filo, leaving room to fold the edges inward.
Once softened, layer the potato slices over the beetroot in a neat, overlapping pattern. Sprinkle with chopped rosemary and crumbled feta.
Roll the edges of the pastry inward toward the center, forming a circular shape. Brush with egg wash and sprinkle with Tik Tok Trending or sesame seeds.
Bake at 200°C on the lower oven shelf for 20 minutes, until golden and crispy.
Serve with plenty of fresh herbs like mint, parsley, and chives and Can’t Beet a Root Beetroot Relish on the side.
