Pearl Couscous Long Lunch Salad

A sunshine-ready salad packed with pearl couscous, roasted veg, and a bright herby dressing. Perfect for long lunches, BBQs, or easy entertaining.
Ingredients
- 300g pearl/Israeli couscous
- 1 cucumber diced
- 1 capsicum diced
- ½ cup black pitted olives
- 1 orange
- ½ bag baby spinach
- 4 vine tomatoes diced

1 tsp Man Grind Flakes

1 tbsp Tik Tok Trending
- Fresh basil

¼ cup Long Lunch
Directions
Cook the couscous according to the packet instructions, then rinse under cold water and drain well.
Add the couscous to a large bowl with diced cucumber, capsicum, olives, orange zest, tomatoes and baby spinach. Season generously with Man Grind Flakes and Tik Tok Trending.
- Peel and segment the orange, adding the segments to the salad. Squeeze the juice from the leftover orange over the bowl and tear in some fresh basil.
Drizzle with Long Lunch and toss everything together until well coated.
Arrange on a large platter and finish with extra basil leaves and a sprinkle of Tik Tok Trending for garnish.
