Garlic Bread Chicken One Pot

Tender chicken baked in a rich, creamy garlic sauce with all the flavours of your favourite garlic bread. An easy one-pot dinner the whole family will love.

Garlic Bread Chicken One Pot

Ingredients

  • 1 red onion, finely sliced

  • 2 large Agria potatoes, peeled and diced into 2cm cubes

  • 6 chicken thighs

  • 2 tablespoon olive oil

  • 1 tablespoon Sunshine Salt or Man Grind Flakes

  • 4 tablespoons plain flour

  • 1 cup chicken stock

  • 1 cup cream

  • 3 tablespoons G-Banger

  • 2 cups spinach

  • Extra Sunshine Salt or Man Grind Flakes, to taste

Directions

  1. Heat a splash of olive oil in a large frying pan over medium heat. Add the sliced onion and diced potatoes and cook for 3–4 minutes until starting to soften.

  2. Toss the chicken thighs with olive oil, Sunshine Salt or Man Grind Flakes, and flour to lightly coat.

  3. Remove the onion and potatoes from the frying pan and set aside. Add a little more oil if needed, then sear the chicken thighs until nicely coloured on both sides.

  4. Pour in the stock, then return the onion and potatoes to the frying pan, nestling everything in. Simmer for 5–10 minutes.

  5. Add the cream and G-Banger, stirring gently to combine. Simmer for another 5–10 minutes until the chicken is cooked through and the potatoes are tender.

  6. Remove from the heat, add the spinach and stir through until wilted. Taste and adjust seasoning if needed.

  7. Serve warm. It’s a full meal on its own, or great with lemony greens or a side of garlic bread.
