Sticky jerk it pork belly bites

Serves: 4

Juicy decadent pork belly bites with a bbq jerk spiced glaze. Super easy! 

Ingredients

1kg pork belly (must be high quality)  bone out skin out
2 tbsp potato starch

Sauce:
3 tbsp Get Lit
2 tbsp lemon juice
2 tbsp sugar
3 tsp Jerk It Seasoning
500ml beef stock
⅓ cup soy sauce
2 x star anise
1 x cinnamon stick  

Instructions

1:

Take your pork belly and cut into into a nice chunky 3 cm dice. Season it with man grind and toss it with the potato starch.

2:

Place the pork into a shallow casserole dish.

3:

Combine all the sticky sauce ingredients in a bowl, and add half the sauce to the pork and mix well.

4:

Pop the lid on the casserole and into the oven at 180 degrees for 1 hour 45 minutes.

5:

Remove from the oven and stir in the rest of the marinade.

6:

Turn your oven up to 200 degrees to crisp up the pork and pop back in the oven for another 20-25 minutes til the pork is super tender and te sauce nice and sticky. Be careful not to burn!

7:

Serve on rice, garnish with Pepper and Me poke me seasoning, spring onion, kewpie mayo and sesh oil if you like!
