Quesadilla bites

These tasty little morsels are a great party food, an easy dinner or lunch, and perfect for afternoon nibbles to go with a few cold coronas!

Ingredients

  • 400 gm Beef Mince
  • 1 Whole Brown Onion Diced
  • 1 Tin creamed corn
  • 1 TBL Chipotle Peppers or sauce Chopped
  • 2 TBL Mexellent paste
  • 1 Packet Tio Pablo Mini corn tortillas (softened as per instructions on packet)
  • 150 gm grated cheese

Instructions

  1. Cook off the onion in a splash of olive oil, then add the mince and Mexican paste.
  2. When the mince is almost cooked through, add the tin of creamed corn and the chipotle.
  3. Continue stirring and cooking out the mince until the mixture is quite thick rather than sloppy. This stops too much oozing out when cooking.
  4. Spread out your warmed corn tortillas on the bench and divide the mince mixture onto each, about a heaped tablespoon per tortilla.
  5. Spread out along one half of the tortilla only (so you can fold it in half) and top each with a sprinkle of the grated cheese.
  6. Fold in half and press down tightly. Cook about four at a time, until crispy in a hot sand which press. Be sure to wipe out any excess oil with a paper towel after each batch of quesadillas are cooked.
  7. Serve with guacamole and sour cream, or a nice big salad for dinner.

Recipe Notes

These can be made with any size tortilla, but the little ones work well for snack/crispy bite size and would go down so well at a Mexican party!

Leave out the chipotle peppers and the kids will love them too!

    OMG yum !! Thanks so much Cherrie ! Our goodies arrived last night and dinner time tonight could not have come quick enough ! Decided to give this recipe a go first and it is a total hit. So delicious and incredibly quick and easy to make 5 STARS without a doubt !

    I made these vegan using a can of refried beans and 1/2 a tin of normal black beans – so good!!!
