Cornbread Waffles

A delightful twist on a classic comfort food with our Cornbread Waffles. These golden delights combine the fluffy texture of waffles with the savoury sweetness of cornbread!

Ingredients

1 cup flour
1 1/4 cup cornmeal flour
1 cup milk
1 tbsp vinegar
2-3 tbsp sugar
1 tsp Man Rub
Man Grind
2 tsp baking powder
1 tsp baking soda
2 eggs
75g butter, melted

 

Instructions

1:

Add vinegar to milk and set aside for 5 minutes.

Place all the dry ingredients in a bowl and whisk together.

3:

Add eggs and melted butter to the milk and whisk, season with Man Grind.

Pour into the dry ingredients and mix to combine, it won't be a smooth batter, it will have some texture.

To cook as waffles, pour batter into a greased waffle maker and cook for about 4 minutes until golden. Repeat until all batter is used.

6:

To cook as a slice preheat oven to 200C Fan Bake, pour into a lined baking dish or cake tin. Bake for 20-25 or until the top is golden and skewer comes out clean when placed in the center. The cooking time depends on the size of your cake team. When baking this way you can also fold through about 1/3 cup of frozen corn.


Recipe Notes

For this recipe you need to use Cornmeal flour, not polenta cornmeal. It can often be found with the gluten free flours at the supermarket and Healtheries is the most common brand available.

To make Gluten Free use GF flour instead of standard
